AMCHUR

Often referred to as ‘Mango Powder’, it is a fruity spice powder made from dried unripe mangoes and is used as a citrusy seasoning. It’s great for improving eye health

​Amchur Chickpea Curry

​Ingredients
1 tbsp coconut or olive oil
1 large onion minced
2 cloves garlic minced
2 tsp cumin
2 tbsp amchur powder
2 tsp turmeric
1/2 tsp chili flakes (optional)
1  16oz. can crushed tomatoes
4 cups cooked chickpeas or (2 15 oz.cans rinsed and drained)
1 cup water
1/2 lemon juiced
2 tsp fresh grated ginger
Salt and pepper to taste

​Directions
  • Heat oil in a large skillet.
  • Add onions and cook until translucent.
  • Add garlic and saute over medium heat until browned (3 - 5 minutes).
  • Add cumin and tumeric and stir thoroughly.
  • Add crushed tomatoes and cook 5 minutes.
  • Add chickpeas and water.  Stir until combined.
  • Add amchur powder and lemon juice.  Cook covered for 10 minutes.
  • Add fresh ginger and chili flakes (for more kick).
  • Stir and cook uncovered for 2 - 3 minutes.
  • Serve over rice of choice.

​Amchur Roasted Potatoes

​Ingredients
4 Cups baby potatoes (cut into 4 wedges)
3 tbsp olive oil
1 tsp tumeric
1 tsp Amchur powder
1 tsp salt and pepper
1/3 tsp cayenne pepper (optional for more heat)
1 tbsp fresh lime or lemon juice
1/4 cup fresh parsley or cilantro

​Directions
  • Preheat oven to 450 degrees Celsius.
  • In a large bowl add cut potatoes, olive oil, turmeric, amchur, salt, pepper, and cayenne (if using).
  • Mix well to incorporate all seasonings.
  • Place potatoes on a parchment lined cookie sheets.
  • Bake for 20 - 25 minutes.  Then turn potatoes.  Cook for an additional 10 - 15 minutes or until potatoes are crispy and cooked throughout.
  • Sprinkle lemon or lime juice and chopped parsley or cilantro and a pinch of salt & pepper.

USES FOR AMCHUR

It has a honey-like fragrance and a sour fruity flavor as well as tart. It is used in dishes where acidity is required. Commonly used in stir fried vegetable dishes, soups, and curries. It is often used to marinate and tenderize meat and poultry. It adds a fruit flavor without adding moisture and as a souring agent. It adds an ‘acidic brightness’ to the food it is applied to.
