Using Fleur de SelTraditional French Fleur de Sel is collected off the coast of Brittney. Canada now produces a high quality Fleur de Sel from the Pacific Ocean off Vancouver Island. Because it is harvested naturally from the sea and is unrefined Fleur de Sel has more mineral complexity than common table salt and it has more moisture content.
Fleur de Sel was traditionally used as a purgative and salve. It is now used as a finishing salt or garnish to enhance the flavor of food. |
