Lemongrass Chicken Thai Noodle Bowl
Ingredients 2-3 tbsp olive oil 1-2 garlic cloves 2 tbsp fresh chopped ginger 1 red onion finely diced 1/2 cup each finely diced carrot and celery 1 bunch bok choy chopped 3-4 boneless chicken breasts
2 tsp turmeric 2 tsp lemongrass powder 1 tsp salt and pepper 3 tbsp peanut sauce 1-2 cups chicken broth 6 ounces rice vermicelli noodles chopped salted cashews or peanuts 2-3 sprigs cilantro for garnish
Directions
In a large bowl combine chopped chicken and seasonings (turmeric, lemongrass, peanut sauce, salt and pepper). Mix thoroughly.
Heat olive oil in a large saucepan. Over medium heat add onion and cook until translucent.
Add fresh garlic, ginger, chopped carrots and celery and stir occasionally for 5 minutes until vegetables are tender.
Add chicken and seasonings and cook until chicken is cooked throughout, Approximately 5 minutes. Add a touch of chicken broth, if necessary to avoid sticking.
Add 1 cup chicken broth. Bring to a boil and add bok choy. Reduce to a simmer.
Meanwhile bring a large pot of water to a boil. Remove from heat and add rice vermicelli noodles immediately, stirring to separate. Add a touch of olive oil, if necessary.
Soak noodles for 2 - 4 minutes until tender.
Drain noodles completely and add simmered chicken and vegetables.
Spoon combined mixture in bowls and top with chopped salted cashews or peanuts and cilantro.
1 tbsp lemon juice 1 tbsp pure maple syrup 1 tsp sriracha (optional for kick) 1 block extra firm tofu (drained and chopped) 1-2 sprigs of parsley or cilantro 1 tsp salt & pepper
Directions
In a large bowl combine chopped drained tofu and add all seasonings, lemon juice and maple syrup. Set aside.
Heat olive oil in a large saucepan. Over medium heat add tofu mixture and cook until golden. Approximately 10 - 15 minutes.
Serve over rice of choice. Garnish with fresh parsley or cilantro and a pinch of salt and pepper.
